The past couple of days have been nothing short of overwhelming, and I don't mean it in the negative sense of the word. The amount of readers, comments, Facebook "likes," and e-mails that have happened amazes me. I guess I didn't realize that as many people would see this article and respond in some way or another.

It's Independence Day, for some.
This year the day that the United States celebrates it's freedom means a little bit more to me. For most of my life I've lived in this country full of freedoms that were given to some but not all. Today as I sit here typing this I realize that I'm one of the lucky ones.

Eagles, waves and sunsets.
That's what Tofino seems to be for me. I still can't get over the sound of the surf hitting the beach literally outside out door. We have all the doors open right now, mainly because I set off the smoke alarm this morning...but to most people I'll say it's because we wanted to hear the waves. :) It's our little secret.

Just one of those days...
Ever had one of those days that no matter how hard you try to get ahead, you feel like you are running about 20 clicks behind the rest of the world? Today is that kind of day for me. I feel like the hours are just flying by, and that I haven't completed many of the tasks that I needed to today. Maybe it's the weather...yea...that sounds good. It's the weather!

Back to Basics!
Today I found myself being excited about making something that is very basic in the life of any chef or home cook, making chicken stock. Now I know you are thinking, "Brian, this isn't simple! Simple is going to the store and buying the box or can of chicken stock!"
